Replying to @im._in._your._walls today weâre doing Barbados in honor of their independence day today đ§đ§â¤ INGREDIENTS: COU-COU âĸ4 cups of water âĸ1 tbsp salt âĸ2 cups of corn meal âĸ10-12 okras, sliced GRAVY âĸ8 filets of fish (use your favorite cut of white fish) âĸÂŧ cup Green seasoning for fish âĸ1 ÂŊ cup water âĸ12 -18 cherry tomatoes âĸ1 large yellow onion âĸ1/4 red bell pepper diced âĸ1/4 green bell pepper diced âĸ1 tbsp green seasoning for gravy âĸÂŧ cup olive oil âĸ1 ÂŊ tbsp ketchup âĸÂŧ cup hot pepper sauce âĸ2 tbsp butter âĸ1/2 tbsp black pepper âĸ1/2 tbsp garlic powder âĸ12 tbsp adobo âĸÂŧ tspn paprika âĸ2-3 OR SPRIGS OF FRESH THYME DIRECTIONS: 1) Prep your fish with salt, lime, and a generous amount of green seasoning and roll them up. Set them in the fridge until youre ready to cook them. 2) Slice up the okra and boil it with 4 cups of water for about 7-8 minutes. Let 2 cups of corn meal soak in 1 ÂŊ cup water while okra is boiling. Then pour corn meal into the boiling water and combine. Bring to a medium low heat and continue stirring until Cou cou had soaked up all the water and it has a fluffy and thick consistency. Add a serving size into a greased bowl and move it around to form the ball. 3) In a large pan bring 1 ÂŊ cup water to a boil then add the peppers, tomatoes, and onion. Once veggies have softened a bit add in the green seasoning, scotch bonnet pepper sauce, ketchup, adobo, garlic powder, and black pepper. Let the gravy cook down and thicken up on medium heat for about 10 minutes then add in the thyme. 4) Add your rolled fish to the gravy and baste the fish so it gets covered in the sauce.
