Replying to @im._in._your._walls today weโ€™re doing Barbados in honor of their independence day today ๐Ÿ‡ง๐Ÿ‡งโค INGREDIENTS: COU-COU โ€ข4 cups of water โ€ข1 tbsp salt โ€ข2 cups of corn meal โ€ข10-12 okras, sliced GRAVY โ€ข8 filets of fish (use your favorite cut of white fish) โ€ขยผ cup Green seasoning for fish โ€ข1 ยฝ cup water โ€ข12 -18 cherry tomatoes โ€ข1 large yellow onion โ€ข1/4 red bell pepper diced โ€ข1/4 green bell pepper diced โ€ข1 tbsp green seasoning for gravy โ€ขยผ cup olive oil โ€ข1 ยฝ tbsp ketchup โ€ขยผ cup hot pepper sauce โ€ข2 tbsp butter โ€ข1/2 tbsp black pepper โ€ข1/2 tbsp garlic powder โ€ข12 tbsp adobo โ€ขยผ tspn paprika โ€ข2-3 OR SPRIGS OF FRESH THYME DIRECTIONS: 1) Prep your fish with salt, lime, and a generous amount of green seasoning and roll them up. Set them in the fridge until youre ready to cook them. 2) Slice up the okra and boil it with 4 cups of water for about 7-8 minutes. Let 2 cups of corn meal soak in 1 ยฝ cup water while okra is boiling. Then pour corn meal into the boiling water and combine. Bring to a medium low heat and continue stirring until Cou cou had soaked up all the water and it has a fluffy and thick consistency. Add a serving size into a greased bowl and move it around to form the ball. 3) In a large pan bring 1 ยฝ cup water to a boil then add the peppers, tomatoes, and onion. Once veggies have softened a bit add in the green seasoning, scotch bonnet pepper sauce, ketchup, adobo, garlic powder, and black pepper. Let the gravy cook down and thicken up on medium heat for about 10 minutes then add in the thyme. 4) Add your rolled fish to the gravy and baste the fish so it gets covered in the sauce.
